We're having pasta bolognese.
Salad is watercress with pear and manchego.
If I get home early enough, I want to make dill-cottage cheese muffins to go with.

Hi, NJ Cher - we settled the menu at 6 AM as spouse gets to shop and he takes 45 minutes where it takes me 10. Where we live is 30 minutes from any store!
I would love some of that fresh Alaskan salmon.

(32,973 posts)My dry measuring cups are all white plastic, & I picked up the 1/2 cup mistaking it for the 1/4 cup. Wow was the roux thick until I looked again at the measuring cup. I had enough butter, chicken broth, and milk so I was able double the batch by doubling the liquids and increasing the broccoli. I will be eating this batch of tasty soup for the many meals this week. I'm also thinking of puréeing this and using the soup as base for tuna casserole this Friday.

Microwave coffee-cake in a cup for dessert.
8 more dinners until our next check, and there's not much left in the freezer. Tomorrow I'll make a homemade chicken noodle soup (I have a chicken carcass in the freezer that still has some meat on it, and some homemade stock in the freezer, and some onions and carrots.) I've got some cans of tuna and some macaroni and some peas, so maybe tuna noodle (elbow) casserole. And I have a couple of bags of ground beef (we portion it out before we freeze it) so maybe a shepherd's pie or cheeseburgers or even faux salisbury steak. There's also a package of chicken drumsticks. I think we're going to make it. It's been a tough month, and I want to say that it would have been so much worse if it had not been for the kind people of DU. Thank you all so much.

i have a simple recipe from the Pioneer Woman. This was the huband's request and he's getting potato-chip fries too(I'm having a tuna plate lol).
He loved it! Half the recipe made three big burgers, two of which are now residing in the fridge.

(5,657 posts)The burger is served on tstd french bread with a cucumber, chopped garlic, feta, avacado, and basalmic vinegar salad dumped on it. Quinoa cooked in garlic and topped with parmesean is the side.
My loaf of bread is drying up so I cut the rest of it up and will make some french toast for dessert and breakfast tomorrow.
