What's for Dinner, Mon., Feb. 4, 2019

First up is tuna salad over lettuce greens. It has onions, zucchini, cucumber, and Poblano pepper to go with the tuna. The RG used olive oil-based dressing for it, which I don't like, so I'm going to put mayo on mine.

Next up, the spinach/ground pork pie that was made a couple days ago. He made two. This one is in loaf form, though, and doesn't have a lattice top.

Dessert looks like peach cobbler.




update: The RG changed the tuna salad so I like it. Whatta' guy.

Used meyer lemon and garlic as the main herbs. I am going to have a leg and thigh with mashed potato and corn.
The rest of the chicken will be used up in the week’s meal plan.

I am looking for a dessert where I can use more of the bag of meyers I bought. Maybe pudding but I am too lazy for the whole pie!

is delicious. The recipe is in the Joy of Cooking, or can probably be found online as well. I think it would be really good with the Meyer lemons.

I ended up making a Meyer lemon butter cookie. They are very tender. I had whipped cream cheese so added that to the glaze. Love cream cheese and lemin together. I will try the sponge.

I ended up eating a slice in a flour tortilla with some sriracha and then I finally made this enchilada soup mix I had bought in New Mexico a long time ago and added some pork to that. not too bad.
