What's for Dinner, Mon., Mar. 4, 2019

The RG made soup with the lamb shanks we had in the slow cooker.

He is also making pasta fagioli, however, I'm going with the soup.

I bought some watercress at the greengrocer this afternoon and plan to serve it with sliced pear and toasted walnuts.

For dessert, I bought some blueberries and plan to serve them with tapioca pudding.

I didn't follow the exact traditional recipe etc.
Tuna packed in olive oil, garbanzo beans, celery, red onion, roasted red pepper (from a jar that I need to use up), and parsley. Dressing is olive oil and red wine vinegar. All washed down with Sauvignon Blanc.

Dessert? Who knows? Bedtime might come before then.

BTW, what does RG stand for? Can I get some RG?

stands for "Resident Gourmand."

He's in the gourmet food industry; he loves to cook and experiment. That's why I call him the RG. And no, dear Sanity, I'm not sharing him.

I kept wondering how this RG came up w/ some of the stuff you guys eat.

I have to admit that I'm often jealous of your menus.

Don't get me wrong.. I truly enjoy the "comfort foods" that I make. I just sometimes I wish I had more of a recipe file for when I want something different (then again, we're restrained by budgets too, so it may be a moot point).

I'm in Pensacola, Florida and the local oyster bar has a Monday special. A dozen of those babies will feel just right.

For the rest, a salad, I guess.

Chocolates later on.

First time he ever made gnocchi, and it came out great!

I made a mixed green salad and we had red wine.

They are eating chocolate ice cream.... I took a pass on dessert.

Rice, Beans, & veggies layered between corn tortillas. Topped with some vegan cheese (new brand to me), guacamole & tomato. Hot decafe tea.

Maybe later frozen berries & yogurt.

Blackened yellowfin and dolphin on a soft shell with spinach, diced tomatoes, gouda and cheddar cheese, sour cream and salsa.

I don't eat many pancakes, but I've been known to make hash out of almost any protein I have left over.

Hash w/ an egg on it, sliced tomatoes.... doesn't get much better.

Can't remember the last time I had that.

I just had a slice of cheese and a couple of pieces of toast w/ peanut butter.

This cold I've been fighting is kicking my butt today. Didn't sleep very well last night due to the cough.

I went over to my folks and made them dinner (baked breaded chicken drumsticks, baked potato and a medley of broccoli, cauliflower and carrots) but ran out of steam after that.

I may make myself a cup of ginger & lemon tea a bit later--if I stay awake long enough.

I'm sorry you're not feeling well. The ginger tea will make you feel better. I don't have a cold but was bored with my usual winter drinks (hot chocolate, coffee, tea), so went out today and got lots of ginger, lemon, and coconut milk for turmeric milk. The ginger tea is, as I am sure you know, a natural decongestant. I have a friend who is a pharmacist and says it's as good or better than any pharmaceutical they could sell you.

There is nothing like ginger tea! I love to inhale it as I drink it. I feel like I'm clearing out my head.

Oh and speaking of, not long ago when everyone in my house had a bad head cold, I put eucalyptis oil in a small bowl. Then I put that in a pan of water and covered it. Brought it to a boil and removed the cover while quickly covering it with a towel. Ducked my head under the towel and breathed in all that wonderful scent. It made me feel so much better. One of the best head cold remedies ever.

You are super terrific for making your parents such a nice dinner, even when you are not feeling up to par.

I'll make myself a big pitcher of iced ginger tea to drink instead of my usual Crystal Light.

I like your trick w/ the eucalyptis. It reminds me of vapor rub, which I swear by. I don't use it at night though, as when it loosens everything up, as it induces coughing and I don't like to be up coughing all night.

My standard remedy for cold symptoms is to do everything I can during the day to get my chest and sinuses loose (humidifier, vapor rub, etc) and to get rid of whatever gunk I can, and then at night I medicate myself so that I can sleep.

I wish when people are sick they'd stay home. My guy and I figured out where we caught this because we haven't been hardly anywhere. I go to my folks to cook a couple of times a week, but they have not been sick. Al took the dog to the vet after two of the dogs got into a scuffle and one of the dogs got bit. When he went back for the follow-up visit, he asked them if anyone there had been sick and he got the response, "all of us." I missed my granddaughter's 1st birthday party because I was too sick to go. Makes me angry.

Seared it in the cast iron. Garlic salt and onion powder then finished it with a tiny pat of butter and sea salt. A1 on the side. And I made mashed potatoes with sour cream added. Will have leftovers for lunch tomorrow.

I made one not too long ago. The recipe called for some prepared mustard, some ketchup and some Worcestershire sauce, and included an onion gravy on the side. My guy LOVED it. Said the concept reminded him of high school cafeteria, but the taste was infinitely better. A bit of nostaglia for both of us.

melted cheddar on a chipotle bun and was supposed to have chipotle mayo and jalapenos as well but that place is two for two on screwing up my order now. also haystack onions (fun and yummy supper thin battered onion "rings" )
