What's for Dinner, Thurs., Mar. 7, 2019

I'm making salad with baby arugula and baby spinach. It will have blueberries in it, and also feta cheese and toasted walnuts.

The RG is on his way home from Massachusetts and says by text that he's picked up some lamb chops. I don't know how he'll fix them but I'm betting that since he just bought some new rosemary, he will use rosemary and garlic.

Last night he made some type of spicy relish with cubed zucchini, cucumber, red onion and maybe a few other things. I'm trying to think of how we can use it on some type of little pancake. Or a little taco, maybe as an appetizer. Still researching that one.

Roasted veggies.
Hot decafe tea.
Shortbread tartlet with cherries & a chunk of dark chocolate baked together as a dessert.

I've been in Florida helping my dad get ready to move out of his house and into an assisted living joint. We were eating three full meals every day and too many of them were in restaurants. I'm sure I put on at least five pounds. I'm glad to see him eating heartily, but I can't keep doing that with my recent stent experience.

I had a healthy, clean lunch of a vegetable salad with a fruit plate for dessert. That's enough for today.
