Starting off with an appetizer of crackers and cheese using artichoke to add to the flavor. A few apple slices and red grapes for later.
Shrimp over rice. Thai recipe using coconut milk. The rice is a no or low-carb kind. This dish has pomegranate in it for crunchiness.
Chopped vegetables in radicchio leaves, kind of like a roll-up or a taco.
Chamomille tea and red grapes for dessert.

(22,047 posts)Since I had a stent inserted in January, I've been trying very hard to eat well. The list of acceptable foods my cardiologist gave me allows for some things you might not think are appropriate, but in general, the diet's theory is based on moderation.
The Landlady(!) decided she wanted to have cheeseburgers. She said she's going to pick up the ingredients on her way home. When I asked if there was anything could get, she said no a little too quickly. I suspect she's going to get turkey burgers or veggie burgers and try to trick me. Whatever. If she likes me enough that she wants me to live longer, that's okay with me.
She did come up with a fantastic way to make French fries. Slice up the potatoes into shoestring size. Soak them in cold water to leach out the starch. Dry them in a clean towel. Rub olive oil on them and bake them until crisp. They're delicious and healthy.
Tomorrow is our two-month anniversary so I'll pick up a nice little dessert wine on the way home.

(47,521 posts)Cook spaghetti, reserve 1 cup water.
Thinly slice 3-5 garlic cloves, heat olive oil on low, add garlic and 1 Tbs red pepper flakes - 1-2 min. Increase heat, add cooked pasta, 3 T butter. Add more cooking water if needed, until sauce is creamy and coating the noodles. 1-2 minutes.
Remove from heat, add zest and juice of one lemon and chopped parsley.

(55,019 posts)canned corn, black beans and tomatoes, onion, garlic, cut up chicken breast, store bought stock, wilted parsely/cilantro, any chiles from the vegetable drawer, random spices esp cumin. maybe some rice or just corn chips. it got almost cold the past few days, one last chance for warming "soup" this spring.

Not as good as fresh, but infinitely better than canned.

(20,990 posts)they changed it, so switched to tomato soup + add some brown sugar & cream, 1 onion, 1 green pepper, enough noodles(cooked al dente. add + cook til over done. add pepper to taste.

When I came home from dinner yesterday, I had a plate for Al, and 1/2 of the steak that I didn't eat. Al had his plate of food, and I took my steak and put it in a bowl of ramen w/ some broccoli and onions.
