I walked in after work to find three beautiful golden chicken pieces in the cast iron skillet. The RG was basting them with rosemary, garlic, salt, pepper, and olive oil.
He also made salad with Napa cabbage and shredded vegetables. Very colorful, with red cabbage and carrot.
I am so looking forward to this dinner!

(732 posts)some fresh kale from the garden. Kale will be in olive oil with minced garlic and hot pepper flakes.

(38,560 posts)Al has a meeting at the American Legion tonight, so I'm keeping it simple and easy.
Frozen 3-cheese pizza, doctored up w/ chicken sausage, caramelized onions, spinach and garlic.
Mom and Dad (and my sister) had chicken stir-fry (broccoli, carrots, celery, red bell pepper, onions, garlic and ginger) over brown rice.
(This was my 3rd evening in a row over there and ever since she broke her ankle and had to start wearing the boot, she has been very agitated and argumentative. She doesn't remember that she broke her ankle, or that she saw the doctor. She just knows that she doesn't want to wear that boot. What's worse is that the pain meds are making her constipated and as we try to alleviate that, she needs to get up a lot to use the potty and each time it's a fight to get that boot on her. She tried to kick my dad today and she's been threatening us and swearing at us and it's VERY ugly.
I usually like going over there to cook for my mom. This woman is not my mom. It's a very ugly doppleganger.
I hate Alzheimer's.)
