Kachumber Salad Receipe

We decided to do a few Indian recipes for the next little while! Hubby has picked up a few delicious Indian recipes from Indian restaurant cookbooks and also from some Indians and Sri Lankans he knows in the industry. They are super delicious, lots of bright flavours, often spicy, and usually pretty easy to make (though sometimes with long cooking times). This is a side dish or salad that is popular across India with lost of regional variations. This is a pretty basic version of this salad, though some recipes include carrots and cabbage as well. After doing a little research, there is a similar dish called Kachumbari that is popular in the African Great Lakes region, though the version there tends to be a bit spicier, but has the same basic recipe.

The chili is technically optional in this dish, but we find that it adds a lot. If you don't have dried Thai bird chilis, you can use fresh, or a pinch of cayenne pepper. Fresh serrano or guajillo peppers would also make a nice addition. If you want it to be fiery, you can kick it up with habanero or scotch bonnet peppers!

We make a similar thing with watermelon replacing the tomato with lemon, honey, and cilantro providing the bite.

We use it as a topping on rich and flavourful curries, and it really cuts the richness a little. Next week's video is going to be a really delicious cashew chicken curry that we top with this salad.
