Big, juicy pork chops were in the oven when I walked in the door. Covered with herbs and seasonings, they have cream sauce to put over them.They will be accompanied by mushrooms in sauce.
Vegetables: corn, cut from the cob.
Roasted Brussels sprouts.
Grilled eggplant slice with Buffalo mozzarella on top.
No salad is planned, but I may just tear up some fresh baby arugula to munch on as a side.

Tossed green salad (organic romaine, red leaf, arugula, and iceberg) plus cukes and red onion in a vinaigrette

Not sure of dessert. I don't eat dessert but my guys usually have some kind of ice cream.
It's so cold and rainy here I really could have gone for soup instead!
