What's for Dinner, Sun., June 23, 2019

I'm having a frozen dinner from the supermarket. I know, cop out, but I will make a big salad to go with it.

The frozen dinner I have selected (the RG is at the Fancy Food Show, which is why no homemade dinner for me) is General Tso's chicken. Some company named Innavision or something along that line.

I will, however, make a big, fabulous salad with greens from the garden. I am going to mix in some homegrown iceberg for crispiness. Someone at the community garden gave me a head. I would have never grown this lettuce on my own, as it has a reputation for not being particularly nutritious. The head was about 2 feet across at the base, and then it grew very nicely into a compact head. It was a fabulous sight to see them growing, and I might even have a photo. If I do, coming up in the next post.

I thought the same until a week later when the iceberg head formed.

Do a Google image search under "iceberg lettuce" and you'll see some growing in the field. What seems to happen is that the lower leaves are very large and spread out and they cut just the head. It's a shame, too, because those lower leaves are much greener than the white of the head. Presumably more vitamins and minerals in the darker part of the leaf?

Today I felt like cooking,,,I don't do fancy ingredients, I do flavors,, tonight is a chuck roast,,been in oven for 3 hours,,will be great 3 hours form now,, with mushrooms, whole tomatoes, pearl onions, carrots and small potatoes,, wife is making a butternut squash casserole to go with

buy the roast,, buy all the veggies you like,, buy the cheapest french onion dry mix you can find,, x 3
,,I use a crock starter sauce just for seasoning,, and 2 boxes of beef broth,, put 1 box of beef broth in ,,the crock starter mix and whisk,,add all onion mixes and whisk again,,,roast goes in,,,ad all veggies along the side,,,and then the last box of beef broth,, I am not a water fan,although you could do water instead of 2nd box of broth... cover ,, 350 for HOURS! 1 hour before ready to eat,,uncover,,let steam and condense flavors for gravy,, it is that simple

Fusilli pasta,fresh peas, garlic and swiss chard from garden, walnuts and nutritional yeast. I make two-three days worth, good to avoid cooking in summer. My favorite vegan recipe(I eat meat.)

Sautéed a pan of kale, onion and garlic, threw in pieces of leftover roasted acorn squash. Added that to cooked pasta, topped it with freshly shredded Parmesan.

On whole wheat tortillas, with green salsa, cheese, and plain yogurt. One of my quick go-to meals. Storming here right now, with possible hail.

I had to travel for the last couple of weeks and ate at a lot of restaurants. I gained five pounds. Weird.

We're home in NYC and the Landlady(!) is roasting chicken. Yellow rice and steamed broccoli as sides.

It's comforting to be home. We love to travel but it's tiring!

On a pretzel bun with lettuce and kale from my little garden. Also red onion and A 1 sauce. Mmmmmmm!
Homemade mac n cheese with sharp yellow and white cheddars. Corn off the cob- Fried in the same pan as the burger.

Fresh fruit later. Pineapple, peach, apple and blood oranges. Making a honey, coconut vinegar and blood orange dressing for the fruit. I will eat the rest of the fruit for breakfast tomorrow and have already packed my lunch from the extras from my dinner. Have a nice night!

very creative!

I especially was interested in the dressing for the fruit. I might try it, having bought 3 kiwis to go with strawberries and blackberries.

I don't know if I have coconut vinegar, though.

Re little garden, something occurred to me tonight. I bought some broccoli at the store, having just come from the community garden where several gardeners have nice heads of broccoli ready to pick. I don't have any broccoli growing and in fact, have never been able to get it grow.

I was going to buy 3 or 4 heads of broccoli at the store, but thought about how I'd have been thrilled with one head if I'd grown it! So I just bought one head.

Funny what perspective a garden can give.

But it isn’t easy. I grew in MO. Needs to be relatively cool and constantly battling bugs. I did not spray except with water to “wash” bugs off. Maybe try broccoli micro greens.
Easy but you have to plant a lot of seeds so you can harvest enough to use. Sort of like doing bean sprouts but in the dirt or seed medium. You can always pick out some of your seedlings to grow in a shady spot to see how they do.

Current garden is a raised bed with kale, red lettuce, lemon thyme, cilantro and spinach. I always look forward to eating food I grow!! I’m about to move so haven’t planted any summer items.

I’ve “taken” and cooked with ACV for many years and recently added the coconut vinegar to my diet. Very good for you like acv.

over white rice. Recovering from rum punch made with oranges from a neighbor's tree. I was a little too zealous with the rum. Shrimp on Sunday is a tradition at my house

To make the carrot salad healthier instead of mayo I used peach yogurt, along with crush pineapple, raisins and shredded carrots. Everyone liked it.

Salmon patties were from Trader Joe's, with some added spices, dilll etc.

Marinated red, yellow and purple tomato slices in olive oil and balsamic vinegar.

Also had guacamole and pita chips.

All in all a healthy summer meal, and the whole thing took less than an hour to put together.
