I made one of my favorite tossed greens salads with farmer's market lettuce. It has chopped green pepper, red onion, diced cucumber, parsley, and sliced turkey bacon. I like to have this with Russian dressing.
The RG is in Manhattan for the next four days, so I'm going to have leftovers. Tonight I will have the rest of the chicken thighs that were baked in mango-peach salsa.
Orangina to drink.
Cantalope with vanilla ice cream for dessert.

Corn on the cob from a farm stand
Salad from my garden (leaf, romaine, and Burpee Salad bowl greens.... cucumbers ... Roma tomatoes)
Green and yellow string beans from my garden w/ chopped garlic
Iced tea. Ice cream for the guys.

(6,697 posts)Leftover taco meat put in flour tortillas with onions and potatoes in an enchilada sauce with cheese baked in the oven. I've got sour cream and lettuce to top with.

(26,286 posts)Diced and sauteed the squash with sweet onion, sweet peppers, garlic and Roma tomatoes. Made some angel hair pasta and tossed that with butter and parmesan cheese and then folded in the veg. Final touch was some fresh basil.
It tasted quite lovely.
