What's for Dinner, Thurs., Oct. 24, 2019

We're kind of "make shift" cooking until Saturday when our new range arrives. The installation service already took the old one away.

Consequently, the RG brought home a couple bags of sandwiches from Paris Baguette. There's a grilled club sandwich with turkey, ham, Swiss, asparagus, bacon, tomato. Another one is the chicken pesto sandwich. Also a grilled Caprese.

There are also some dessert croissants stuffed with strawberries and other berries and what might be whipped cream; not sure.

To go with, I'm making grilled acorn squash rings. The recipe calls for sugar, but I'll substitute agave yet use real brown sugar. The seasonings will include freshly grated ginger and whatever else the RG decides to add.

Tossed salad with cucumber, tomato, red onion, and celery.

I've got some chuck braising at 250 for two hours and then 300 for three more adding bacon strips on top. Braising liquid is chix stock, onions, garlic and carrots with a bit of red wine and rosemary as well as a packet of onion soup mix. Gravy will be the braising liquid plus the bacon, bay leaf fresh tomatoes and a bit of lemon rind strained and mash everything through the stainer to give the gravy some body. Some Au gratin potatoes on the side. I'm having a scary movie marathon and this will be perfect.

I don’t know about the 27th, but today I’m making homemade pizza because my grandson is visiting. At grandma’s house we have pizza and ice cream for dinner. In my defense, I did put vegetables on the pizza.
