Easter Dinner menus (or plans)

Let's share.

I haven't a clue yet, but if I can someone to bring me a leg of lamb, that would be my first choice.

Looking at my current supplies, it might be potatoes....

and more potatoes....

and more potatoes.

(DH went a little overboard on the potatoes on last trip to town).

So I'm thinking I might get some leg of lamb and freeze it for later.

My husband is a shape-note singer, and the Iowa Convention is Saturday, with the traditional potluck "dinner on the grounds". I don't enjoy shape-note singing but want to support him, so am preparing Paska, a Russian style Easter bread, and an antipasto salad for him to take.

Sunday is a potluck brunch at church. The Paska recipe is big, so I'll take some of that, and probably a strata with ham and asparagus, and if I get ambitious, fresh pineapple and strawberries cut up, and mix in some homemade orange jelly to sweeten.

So after preparing that, I don't know that I'll want to cook a big feast to have when my husband gets home from working on Sunday. So I think I'll bake some ham and sweet potatoes, and we can also have asparagus, pineapple and strawberries, and Paska.

having the easter egg hunt at my house in the am and then Kev getting the kids @2. Might go to a freinds house for dinner or maybe I'll just make myself some scalloped potatos, fresh green beans and get a ham steak.

I just got some bacon and eggs on sale at Costco, so will take those down. That's sort of a tradition with us. Our kids are too old for Easter egg hunts and too young to reproduce.

IIRC, the potato dish was a kind of au gratin thing and was delicious. And the ham had a creamy mustard sauce that was also really good.

I'll probably bring lentil salad, humus and flat bread and see if I can coax my brother into some fried asparagus spears.

Sis and BIL won't eat lamb. So it's not an option, though I'd go for lamb skewers on a park BBQ in a heart beat.

We had a Russian Easter dinner one year. Dishes included:

A salmon coulibiac -- the fish is wrapped in a pastry, with decorations made from the dough, and egg glazed. It's beautiful.

Kvas. This is a fermented beverage made from bread. Interesting! Never made anything else like that.

Various salads with sour cream and fresh dill.

Can't remember the rest. But Russian is a good way to go for themed spring feast.

Ham, kielbasi, paprika bacon, deviled eggs, potato salad, cucumber salad and sweet potatoes. My daughter and I made ravioli a few weeks ago so I'll make a pan of those too. My daughter's birthday is on Sunday and she asked for a Carvel ice cream cake for dessert. That works for me.

Our local Weis Market carries them. I'm not crazy about them but my daughter is. I got her a bunny cake so that should get a good laugh from her.

I have a pork roast in the freezer so will use that. I want to find a peppercorn/herb paste for the roast - if anyone has suggestions, please tell.

So it will be pork roast
Fresh asparagus with Hollandaise

A hash brown potato thing I make that is always popular - I get oooos and aaaahhhs. You mix in cheeses and sour cream and stuff and bake it. Here is the recipe for those that might be interested:
MOGUL MOUNTAIN POTATOES:
1 2lb. frozen hashbrowns
1 500 mil. sour cream
1/2 cup melted butter
2 cups aged cheddar - grated
2 tins mushroom soup
1 large onion - chopped
salt and fresh ground pepper
1 tbsp. dill
Parmesan

Mix all ingredients, except Parmesan, in a large bowl. (I find that mixing everything else except the potatoes is easier. Then you mix that in with the pots) Place ina large rectangular pan and top with lots of Parmesang and more grated chedar.
Bake at 350 for 1 - 1 1/2 hours. Serves 8

I might make a spinach salad too. Mandarin oranges (tin ones), pine nuts, thin sliced raw mushrooms and a bit of thin red onion. For the dressing I take just ordinary ranch and water it down a bit with the orange juice.

and for dessert I will be making my first Sweet Potato Pie ever - with home made crust. Always reminds me of Fox Mulder from X-Files.

apparently no else has a stove.

Ham
Chicken
Greens (collards made with smoked ham hock, ham bone)
Tater salad
Coleslaw
Mac and cheese
roasted green beans with bacon bits
corn bread muffins
tossed salad

haven't figured out dessert, probably a pig pickin' cake. I'll tell one of my brothers to bring something else.

Wine--lots of wine for me. Moscato.

forgot asparagus.

That sounds yummy.

I am trying pan roasted duck breast with a blueberry chutney. Also, I feel like roast asparagus and new potatoes. Maybe a field green or arugula salad.

and stand in line. First time in 3 weeks.

I bought a leg of lamb, some sweet potatoes, some eggplant and some cabbage for Easter dinner to have with rice and rolls. The Catholics in this house may be lapsed, but our holiday dinner won't be, lol. Maybe on Saturday I'll pick up a chocolate cake and some flowers for Mom. If all goes well, I want to get some chocolate truffles for her but that's another day of this spine not acting up so I can drive out to the mall. We'll see.

we get up before the sun, celebrate the fact that Christ rose from the grave, sing a little and pray. Then we eat till we are full, go home and sleep for a couple of hours, put on our best sunday dress and go back to church. Dinner with all the family afterwords. A great day.

Lots of food..

lamb, fried chicken, ham, coconut shrimp, beef tenderloin on the carving station, german sausage, waffles and omelets to order, homemade chicken and noodles, mashed and gravy, sweet potatoes, fresh green beans, fresh local asparagus, cheesy potato casserole, homemade bread, 30 homemade pies, 3 kinds of cobbler, rice pudding, carrot cake, chocolate covered strawberries, cheesecake, cookies, brownies, homemade vanilla ice cream and hot fudge, 8 compound salads (3 pastas, potato, slaw, broccoli/cauliflower, sauerkraut, carrot raisin), 30 dozen deviled eggs..Easter and Mother's Day are tied for our busiest day of the year...I won't be cooking supper..

I'm so excited. I haven't cooked one in years. I spent all day yesterday thinking of what I was going to do with it, rub it with rosemary and garlic, brine it with bay and thyme, rub it down with mustard and maple? No...I'm going simple and plain the way my mother did it. I'll score the fat layer on top and give it a liberal salt and pepper sprinkle. Then it will go in a hot pan in a hot oven for a few minutes. Then it will roast low and slow for hours...bathing in it's own juices. I have some little german butter ball potatoes that I'll half peel and I'll throw them in to roast as well. I may even make some hollandaise for the asparagus I'm going to steam.

Fresh Hams are not an easy find in my neck of the woods....So this will be a small event for us!

Killed the hog earlier this year and did a salt/brown sugar cure. Greek salad, taters, unsweetened ice tea, apple Brown Betty.
