Blueberry-apple-goat cheese salad. It has walnuts in it, too, along with ruffly red and green lettuce. I dip the goat cheese slices in egg, then bread crumbs, and saute them until they get a nice golden crust. Honey balsamic vinaigrette.
Vegetarian main course: eggplant in spicy sauce with flatbreads.
Dessert will be a chocolate-covered pear. Hot ginger tea.
Forgive an OT comment:
Big day for us; I stayed inside and watched the impeachment hearing. Illuminating to listen to the three professors. And it's not over yet! Will be munching away on my dinner all through Rachel, Don Lemon, and others. These shows offer so much perspective. Last night one had that psychiatrist who wrote the book about how dangerous Trump is. His theory fit like a glove.

(15,805 posts)Cooked down the carcass of Saturday's rotisserie chicken yesterday in my instant pot and got lots of tasty stock and bits of meat in about 45 minutes. The onions, potatoes, celery and carrots all chopped and ready to go in the pot.
Mr. Procon wants dumplings so instead of the noodles I was planning to make I'm going to do some little dumplings with herbs and just use packaged wide egg noodles. This soup takes 4 minutes in the instant pot. Then I'll switch from pressure mode to saute and stir in some frozen peas and drop in the dumpings when it boils. Takes about 8 minutes for the dumplings to cook.
Nothing better on a cold rainy day than a hot bowl of chicken noodle soup.

(38,560 posts)We usually do our shopping on the last day of the month, which is "pay day," but this month that was the day we had our Thanksgiving feast.
Sunday, Monday and Tuesday we were dealing w/ > 2 feet of snow, so we haven't really been out for a decent shop. Hopefully we'll go tomorrow.
Dad and Sis got a one-skillet black beans and rice w/ kielbasa. (Kielbasa, black beans, onions, green bell pepper, corn, seeded tomatoes, and Cajun seasoning all cooked w/ the rice.) And steamed green beans.
Dad has caught the cold that had Sis sick for over a week. I refuse to get sick. Washing my hands every 15 minutes. I REFUSE TO GET SICK!!!
Your dinner sounds lovely. Wish you could come cook for me while I'm out cooking for Dad...

(22,037 posts)We weren't able to have turkey on Thanksgiving because of work and travel. Then I wanted to be contrary so I got an amazing beef tenderloin that I roasted on Friday.
The Landlady(!) insisted that we were going to have a turkey tonight so she got a breast and it's roasting in the oven.
Homemade stuffing and gravy, of course. She took a sweet potato and sliced it into french fry size. Instead of frying them, however, she's baking them. Steamed broccoli to round off the meal.
For dessert, she picked up a miniature cherry pie and vanilla ice cream.
Better late than never!

(16,334 posts)I was supposed to babysit but that got canceled. My people were going to eat out. I want to stay home but I don't want to cook.
There are a ton of leftovers - and not Thanksgiving leftovers - so we really should eat them up.
