Miniature pizzas with broccoli rabe and mozzarella. Rabe cooked in olive oil and garlic.
Pasta pie made with rigatoni, carrots, cheese, chopped red onion, bits of ham, and cannellinis.
Salads: choice of two types. Tossed green salad with the usual cucumbers, cherry tomatoes, and red onion. Or red cabbage slaw made with pineapple.
Dessert: homemade carrot cake. Spicy chai tea.

I made some chocolate oatmeal cookies today (even turned a few into raspberry thumb-prints)
so there's dessert.
Beef fajitas with marinated flank steak, sliced onions and peppers. Served with soft tacos, lettuce, tomatoes and salsa.
Yellow rice and refried beans with jack cheese, a little sour cream and homemade guacamole.
Margaritas, of course
Fresh pineapple for dessert.

I use my ham and ham bone in it for good broth.
I make a rue with lots and lots of fresh garlic in olive oil
then I thicken that with flour and paprika.
Next add chicken stock and your ham and and ham bone.
Then add fresh green beans. Then add fresh dill lots to your soup. This is a really good soup with some crusty bread!

(35,720 posts)I was mad when I saw the RG put broccoli stems in the compost. Discovered that when I disposed of the compost a while ago. I would have loved these fries. So I showed him the recipe and I said no more broccoli stems in the compost! Thanks FNS!

(10,434 posts)They were delicious, and as easy as it looked.
I know people throw the stems away, if I'm making soup or a casserole or something I just cut them up and put them in. Unless it's a salad or dish that needs just the look of the florets, I'll use them. Now, I'll be saving them up for fries.

(1,883 posts)Made some guacamole with avo, lime, jalapeño, red onion, cilantro and garlic. Mixed in some leftover turkey breast and a tomato. Drizzled on some creamy cilantro lime dressing. Wow.
Chips and salsa on the side.

(68,647 posts)but it is really good...homemade chicken and rice...made gallons. Think I am still feeding 8. I had fruit and salad too...for dessert homemade peanut butter cookies.

(68,647 posts)one cup of sugar, 1 egg and 1 cup of peanut butter. Mix all together. Scoop out with a small cookie scoop...flatten with your palm a bit or a glass...and use forks to put grid marks on top of the cookies. I bake about 10 minutes and 350 F but every oven is different. They should be brown on the edges. You probably have this recipe but just in case...
By the way your recipes sound wonderful, I have tried a couple of your ideas...hubs thinks Iam learning gourmet cooking...hehe.
