What's for Dinner, Sat., June 13, 2020



We had an early dinner of lamb "pie," pictured on the right. Beside it is zucchini/cheese strata topped with pesto. I made fennel -apple-toasted walnut salad with vinaigrette dressing.

For dessert, I fell asleep at the table and dreamed I was having the most divine chocolate mousse. I can still see it in my dream "mind's eye. Clouds of chocolate mousse and I was having the most wonderful time eating it. Then I woke up and saw the RG in the computer room. I guess he abandoned me at dessert, LOL. So I served myself a piece of chocolate and a cup of chai tea with cream.

Reminds me of first chocolate mouse I've ever had, made by mother of high school friend, an art lover and quite a chef, also the BEST chocolate mouse I've ever had! (LONG time ago, recipe's likely in SOMEONE's archive.)

5. chicken & rice

browned the thighs on top of the stove and set them aside, then added onions, garlic, yellow bell pepper, carrots, chopped spinach and mushrooms to the pan, and then some rice. After getting everything coated w/ the olive oil and chicken drippings, I added chicken stock, then the thighs. Put a lid on it and put it in the oven.

Buttered beets on the side.


No room for dessert. I'll just dream about yours (YUMMMMMM!!!!!)

6. Homemade pizza

With pepperoni, mushrooms, black olives and marinated artichokes for toppings. A salad with romaine, carrot strips, radishes and green onions. Made an Asian-style dressing with sesame oil, rice vinegar and lemon juice, garlic and ginger etc. I couldn't get it to blend well so I added peanut butter and blended it with a hand mixer.
