indescribably delicious dish with thighs.

He puts them in a pan with lots of garlic, red wine and canned (!) potatoes.

Then he broils the whole thing until the chicken is done.

After that he stirs in lots of fresh chopped parsley.

It might create some smoke, but it is worth all of it.

I'm avoiding potatoes these days (and bread,) due to blood-sugar issue. (Incidentally, I appear to have lost some weight!) Will check the thread and CONSIDER it!
