We like casseroles because we can match them with a nice salad and have leftovers. Anyone have a good casserole recipe to share??? I am cooking so much these days I am getting bored with the usual.

(31,515 posts)You can easily control the amount of heat in this. I also like to add sliced black olives to mine.
I live by myself and love casseroles. About twice a month I'll make one that I really enjoy and freeze it in 1 serving portions. I haven't made this one in a while and I really like it.

(32,969 posts)1.I believe from my heart, RoTel canned tomatoes do make a taste difference & is worth the 25cent a can price difference.
2. I make my own Cream of Mushroom soup, it's easy, mostly unattened- saute slow& low in a chunk of stick margarine/butter 1/2 c diced onion till golden, add 1-8 oz package of your favorite sliced mushrooms, I use a mix of white& baby bellas, cuz I like the taste. Low heat, stir occasionally. About 15 min, a splash of milk or half& half, stir, adjust salt& pepper. {When I use this soup in this casserole or tuna casserole, I don't make a roux first
I make this soup in various ways depending on what I am using it for. When I make the soup in winter for a roll& soup dinner, I do make a roux for heartiness}.
From wiki about King Ranch Chicken-"Recipes vary, but generally it has a sauce made of canned diced tomatoes (commonly the Ro-Tel brand) with green chiles, cream of mushroom soup, cream of chicken soup, diced bell pepper, onion, and chunks or shreds of chicken. The bottom of the casserole is lined with corn tortillas or tortilla chips, then layered with sauce and topped with cheese. Although it is blander than most Tex-Mex dishes, it has long been a favorite dish in Texas club cookbooks and lunchrooms."

(32,969 posts)I use the cheapest bulk mushrooms, but always toss in a few Bella's. As you heat the mushrooms, they sort of dissolve a bit.
Starting recipe if you want to be more organized the first time or 2. I tend to eyeball/taste measure stuff

(9,265 posts)Made last night, really good. I used zucchini and tomatoes from the garden, and leftover corn cut off the cob.
1 boneless chicken breast, cut into bite sized pieces
2 ribs sliced celery
1 small onion chopped
1 tbsp olive oil
3 cups chicken broth or 3 cups water and 3 chicken bouillon cubes
1 cup raw rice (I used Uncle Bens)
Whatever veggies you want: zucchini, tomatoes, peppers, etc.
In a large pan with a lid, sautee celery, onions and chicken in the olive oil until veggies are slightly soft abs chicken is no longer pink. Add other veggies, rice, liquids and season to taste. Bring to a boil, reduce heat to medium-low, cover and simmer 1/2 hr to 45 min until liquid is absorbed.

(25,853 posts)First is my spicy sausage pasta bake.
1 pound bulk Italian sausage. Sweet, spicy, any combination thereof. I most recently made it half sweet and half spicy.
1 onion sliced
1 green pepper sliced
1 pound rigatoni noodles
2 jars of a nice vodka sauce. Buy a good one.
Fix the rigatoni per package directions. When cooked, rinse well, then sprinkle with kosher salt and a few twists of the pepper grinder.
Meanwhile, cook the sausage and drain.
Cook the onion and green pepper in some olive oil until they look right.
Combine all the cooked ingredients in a large enough casserole. A lasagna pan is a good size.
Now dump the vodka sauce and mix well. Bake at 350 degrees for about 45 minutes. If you want you can top with some Parmesan cheese buy the good stuff, the kind you have to grate yourself on each serving.
Serve with some Italian bread or, better yet, make garlic bread, and a nice green salad.
If wine seems like a good idea, get a nice chianti. Unfortunately, a good chianti isnt cheap, and you really dont want to be drinking a cheap one. If you havent already made friends with some staff at a good liquor store, now is the time to be thinking about that.
Second is a cornbread casserole dish, clearly not a main dish but an excellent accompaniment to lots of things. The first time I made this for a potluck with a group that had been doing a monthly potluck for a couple of years at that point, I was told I must bring this every time we got together. So I did. Easiest thing ever. Oh, and it's on the Jiffy Corn Bread box.
Ingredients
1 (8 ounce) box Jiffy cornbread mix
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can creamed corn (not drained)
1 cup sour cream
1?2 cup melted butter
Directions
1. Mix all ingredients and pour into (greased or sprayed with cooking spray) 8x8" casserole dish.
2. Cook uncovered for 55-60 minutes at 350 degrees.
I bake this in a round glass baking dish. It would bake up very differently if you use a metal pan, and I suspect it wouldnt be as good.
