Meatloaf with chopped vegetables in it. Beef, pork and veal mixture. Chopped herbs, tomato sauce.
Cherry tomato salad with garlic, olive oil, and basil.
Creamed corn with jalapeno.
Dessert: fresh fig with shortbread cookies. Fig jam on the cookies.

I made a homemade chocolate cake for dessert. I didn't have enough powdered sugar to make a frosting, but I made a glaze with powdered sugar, OJ and orange zest.
I always add diced veggies to my meatloaf. I think it keeps it moist and adds tons of flavor. (I used to chop of kale so small that it looked like parsley--to fool my son when he was growing up. lol)

Red wine.
Either a brownie or a creamsicle. Prolly brownie to go with the wine.

(95,247 posts)Some onion, green pepper and garlic sauted in olive oil with about a pound of ground beef. Can of Centro whole tomatoes, can of their sauce, can of their tomato paste. Bit of water, bit of wine, some Knorr beef bullion powder. Salt, pepper, anchovy paste, an Italian seasoning mix that's the house brand at a local market that's Italian owned, extra oregano and marjoram, several bay leaves. A goodly dollop of honey.
Baked covered in the over for two to three hours at 325.
Will probably be putting it over mostaccioli.
