The bone-in breasts were on sale for 99 cents a pound last week. I stick slivers of garlic between the skin and breast, rub the skin with olive oil and sprinkle with herbs. It comes out moist and tasty. We'll have some as roast chicken tonight with mashed potatoes and spinach for side dishes. Later in the week I'll use some of the leftovers for chicken enchiladas, and probably some for sandwiches. So for $2.50 I can get two meals for four people, plus meat for sandwiches.

maybe i'll roast the rest of the baby potatoes that are sitting around. i don't feel at all like cooking tonight, but i can't let the fish go to waste.
