I love making refrigerator pickles but the cukes are no good when they are too big.

You mav have a variety with the "bigleaves hidus syndrome" My apologies, seriously from someone with a family of purple ribbon gardeners, try picking every other day but pick EVERYTHING. Also this next trick seems crazy, but try a double pass system. This is where lone person picks the entire patch, then a different person picks the same patch, preferably several hours later. Seems almost childish, but we found even with patient adults was actually quite effective. Seems to have something to do with foot patterns and missed cukes, Same tricks also worked for zucchini. As far as too large to use, we still had some, especially during baling or fair season, short on time, thinking about other things etc. We found that one very large sow, (female pig) helped cover the embarrassment. They will eat anything. If not able to procure said porcine consider compost Good luck
