I'd quit my job and be very happy spending the rest of my life doing what this lady is doing.

I always say I'd buy the biggest piece of land I could find, plop down a little modular home for myself, and while that was being done, I'd take a trip to Best Friends in Utah and see how they're set up and run. Then, I'd come back to NJ and begin my adventure!! Any creature that needed a home would be welcome....
