The Reuben Sandwich Has a Cousin.

The Rachel sandwich is the cousin sandwich to the Reuben — that American Jewish deli staple made with rye bread, corned beef, sauerkraut, Swiss cheese, and Russian dressing (although, these days, you’re just as likely to find it made with Thousand Island).

Instead of corned beef, the Rachel calls for pastrami, and subs coleslaw for the sauerkraut. That’s already a win for me — pastrami’s bold spicing is always welcome in any sandwich.

Some argue that the Rachel can also be made with turkey — either sliced from the deli counter or from a roasted bird. In some states, like Michigan, a turkey Reuben is known as a “Georgia Reuben” or a “California Reuben,” instead — in some cases, barbecue sauce or French dressing replace the Russian. Others say that a Rachel swaps rye for white sourdough, though I consider this a step too far.

meat substitute pastrami and cheeses I enjoy. I just really pile on the cole slaw or kraut.

Now I'm hungry for one!

I’ve tried a few in the past, haven’t landed on one. I really like vegan ice cream, though!

are delicious IMHO. You can even bake the Camembert and dip your ripped beguette in it!
Yummy 😋 I use their Smoked Provolone on my Veg Reubens and it melts nicely, too.

Have used a smidge of their cream cheese product with my homemade vegan soy milk cottage cheese in noodle kugel, too.

Which vegan ice cream brands do you like? I've always liked Breyers Vanilla ice cream, and now they have an oat milk Vanilla ice cream that I think is pretty good.

A friend introduced me to NadaMoo mint chocolate chip, and I was surprised how good it was because I don’t like that flavor 😆 so I started getting a couple NadaMoo flavors. I usually get So Delicious coconut milk flavors now. So delicious has a lower sugar vanilla that has nice flavor but the consistency isn’t the best… I would love to find more low sugar coconut milk ice creams, thinking about getting an ice cream maker for that.
