Do they release the numbers all at once? At what time? Does information leak out before that in any way?

The raw numbers will mean less than estimates of probable delegate count by people really familiar with the Iowa caucus and convention system. It's very complicated in Iowa, and the final delegate count won't be available until after the state convention held later. Between the caucuses and that convention, there are two other conventions, at the county and congressional district level.
Complicating all that is the fact that delegates to the conventions can change their votes, after signing a declaration of intent. See the details at:
