Can I surmise that nobody actually has a clue as to what the delegate count is...especially since there's still a State Convention to get through?

be official until after the state convention. I suspect that many who are making such declarations are not Nevadans or do not understand the details of the process.
After each state's conventions, we finally will have an accurate count. At this point, they are all just educated estimates. There may be small shifts as conventions are held. Each state does it slightly differently.

As stated clearly on that page:
These County Conventions choose the county's delegates to the Nevada State Democratic Convention. While a non-binding Presidential Preference Poll is conducted during the Conventions, delegates at the County level are not bound to their declared Presidential preference. The number of national convention can be estimated base on voting in today's convention. No national convention delegates are selected until the state Convention on 14 May.
