CA votes late and the result is often already obvious by the time it does. I mean sure it's still technically possible for Sanders to win if lots of states vote for him by enormous margins, but the probability of that happening is very very low. In the aggregate people are very predictable, so while you can't be sure of the outcome of any given contest you can generally predict whether it's going to be close or not, barring major surprises like a candidate dropping out suddenly.

There are other explanations besides the possibility that it's all rigged. Public choice theory basically argues that politics and governance is so damn complicated that the vast majority of voters can't be bothered to figure it out and vote on the shallowest possible criteria like which candidate is more charismatic. Rational irrationality theory argues that since many people's votes don't actually count due to demographics (eg being a Dem ina deep red state or vice versa) that people actually have an incentive to vote perversely.

Political science is quite interesting when you bear in mind that humans are biological creatures and are surprisingly predictable on the group level.
