if lengue tortillas are any anything like that, count me in.

I was not fond of the hog had cheese that they made of the head meat, but that was probably because of the jell like substance they used to hold the meat together. Cabeza tortillas might be tasty as well.

Is the best way to eat tongue, and I like it all ways.

Cabeza is nothing like head cheese, which I also like. They roast the entire head-minus the tongue and brains. Traditionally done over wood coals under the ground. After hours and hours the meat is picked and shredded. It is fantastic.
