A Classic Midwestern Dish Becomes a Talking Point in Iowa

Hot dish, the Minnesota-specific church-supper stalwart that cooks in other parts of the country might mistake for a casserole, is no stranger to hard work.

Early versions of the dish — traditionally a mix of protein, starch and vegetables held together with a creamy sauce baked until it bubbles — helped conserve meat during World War I and fed farm families during the Depression. Topped with Tater Tots or mixed with rice, more modern renditions offer working parents an inexpensive way to get dinner on the table after a long day.

Now, hot dish has been conscripted to help Amy Klobuchar, the senator from Minnesota, win the Democratic nomination for president.

In a series of events that began in New Hampshire last summer and continued this month in Iowa, Ms. Klobuchar has been feeding her recipe, blanketed in Tater Tots, to voters at gatherings the campaign calls Hot Dish House Parties.

We were poor, even if we did not know it, and my mother was quite creative in cooking for many people without using much meat.

It is her version of Mayor Pete's brown shoes with not-quite-navy-blue suits. LOL.

It is used in Minnesota and some parts of Wisconsin. There can be a lot of meat or very little. Green bean casserole is hot dish. So is no-peek beef stew, which is loaded with meat.

Who wrote this dreck? Oh, it appeared in the New York Times. Of course. More condescension toward fly-over country.

heard "hot dish" as a term for casserole in Minnesota.

Sen. Klobuchar’s Taconite Tater Tot Hot Dish

– Cream of mushroom (1 can)

– Cream of chicken (1 can)

– Onions (1 small)

– Garlic (couple cloves)

– Salt

– Pepper

– Pepper jack cheese, shredded (8-12 ounces)

– Tater tots (1 package)

Brown ground beef, drain off fat. Sautee onions and garlic.

In a large bowl, mix together beef, onions, garlic, both cans of soup, salt and pepper. Spread evenly into the bottom of a 9×13 baking dish. Cover with about ½ of the shredded cheese. Then, place tater tops in one layer over the entire pan.

Bake at 450 for 30 minutes, or until tater tots are crisp. Cover with remaining cheese and bake until cheese melts.

i'm from California and only first heard the term "hot dish" a couple years ago, but our daughter who'd moved with her husband to north Arkansas told me what it referred to. She said a 1970s hamburger skillet dish I called "Spanish Slop" and fed them when they were children was a "hot dish." Its author called it Spanish Noodles, no relation to Spain but had Heinz Chili Sauce in it and that kind of slander was common those days.
