just send them a note saying that you wish to be removed from all their mailing lists and database.

No explanation needed, no drama. Just a simple opt-out letter. That's usually all it takes. We want to mail people who don't want to hear from us and are never going to donate just about as they want us to mail them. (So, not at all.) We figure if you change your mind, you'll let us know.

Alternately, if they keep mailing you, you can do what my stepdad did and tell them you're dead...that had the added bonus of showing up to his 25th reunion and finding a "gone too early" shrine for him complete with shitty over-blown-up yearbook photo, flowers and a memorial book "to be forwarded to the family."
